Carl, How an html email appears has as much to do with what you read it with, as how it is sent. The only way to be sure that your text remains in the same font is to make sure that all your styles are inline within the html code, eg: paragraph of text to appear in Arial font There are all sorts of methods of getting a required layout, but the only way to be sure is to test, test, and test again.
