In 6.0.1, I am also unable to edit an existing member's profile fields. In Membership / View I click on the email address I want to edit, scroll down to the profile fields and make my changes. I have been testing 6.0.1 this last week and it is "Great!" as Justin likes to say. I wish I had done it sooner.
