It would be nice to be able to see how long it was between when a user was sent the link and when they clicked it as well as maybe the referrer (in case someone claims they never clicked it, you can show them that it came through their webmail or something like that - not fool proof, but most of my users wouldn't know that). You could probably even use the same table for that.

One other use-case I can think of is that certain requests can be set to require the user to put their profile password in to confirm (like unsubscribing from a specialty distribution list - an off-the-top-of-my-head example: work-place/school emergency notification list.)
