All themes will be available to all lists In your case, I would install a copy of Dada Mail for each client,

BTW: Where to find the old email-templates Because I really want not to re-design them all

If you re-install v9, each list's email templates will be available as before as they are saved in the dada_settings table, in the database Defaults of these templates are in v9 in, dada/templates/email
